NRJSPICE Garlic Dill Potato Salad

·        3  # Yukon Gold Potatoes

·        2 heaping Tbsp. of NRJSPICE Bounty Blend

·        1 cup Chopped NRJ Garlic Dill Pickles

·        1 small onion diced

·        2 stalks of celery diced

·        3 boiled eggs chopped

·        1 tsp celery seed

·        2 tbsp Dijon mustard or your favorite

·        1 cup mayonnaise

·        Salt and pepper to taste

 Cut potatoes into large cubes and place in cold water with a pinch of salt. Bring to a simmer and cook for 10 minutes. Drain and cool in refrigerator. Chop onion, celery, and pickle and mix with cooled potatoes. In a separate bowl combine all other ingredients. Mix well with potato mixture and eggs, refrigerate for one hour. Garnish with chopped parsley and paprika.
