Grilled chicken is a staple, here is a great recipe for anytime and especially good for any BBQ event.
1 package of boneless chicken thighs, substitute any protein for this recipe
1/4 cup olive oil or other oil of choice
4 tbsp NRJSPICE or NRJ Hot and Smokey rub
1 6-8 oz jar of raspberry or blackberry jam
1/2 onion minced
4 cloves garlic minced
salt and pepper to taste
Place meat in a large bowl. In a separate bowl combine jam, spices, oil, onions and garlic. Mix well.
Pour marinade over meat and coat thoroughly, refrigerate while you get your grill ready or overnight.
I use vegetable spay or other lipid to coat the meat before grilling.
Grill on both sides until carmelized and place on sheet tray. Finish in the oven at 350 degrees until internal temperature is 165 degrees for optimal flavor.
